Having the stove pipe above the tent ridge allows the wind coming from any direction to blow sparks away from the tent roof reducing the likelihood of spark holes being burnt in the roof.
If possible, try to position your canvas tent with stove jack downwind from prevailing winds to reduce the possibility of sparks landing on the roof. In this manner, winds will blow sparks away from your tent roof instead of blowing sparks across your roof.
A tarp fly is strongly recommended regardless of where you have your stove jack on your canvas tent. The fly will prevent sparks from burning holes in the roof. A fly will extend the life of your canvas tent many years.

Regardless of which canvas tent with stove jack you have I recommend a fire mat under your stove. The fire mat provides a fire proof area around your stove. The fire mat extends normally 6 inches past the end of your stove and approximately 12 inches to the front. Fire mat is especially necessary in the event any embers or wood accidentally falls out the stove door when opened.
